Sarah Schlafly is the founder of Mighty Cricket, a next generation protein company with a mission to build a clean protein supply to sustain the world.
After receiving an accounting degree from Truman State University, Sarah launched a career in food. She founded a nutrition and cooking school targeted at low income Americans and then became the digital marketing manager for a national food brand. Sarah was featured as Inc. Magazine’s Military Entrepreneur, received a social enterprise award from Wharton School of Business, was chosen as Feast Magazine’s Rising Star, and was awarded St. Louis’ 30 Under 30.
Through her latest venture, Mighty Cricket, Sarah has found success in getting Americans of all ages to try a protein source that many would otherwise find repulsive—cricket. She leans on culinary ingenuity, honed food marketing skills, entrepreneurial experience, global travels and a sense of adventure to lead the world in embracing alternative protein sources.
